Fairmont Jakarta Welcomes Henry ‘Ale’ Maraben as Head Mixologist

Fairmont Jakarta is delighted to announce that Henry Maraben Siktimuktu, known as Ale, has been appointed as Head Mixologist. The role puts him in charge of the Hotel’s entire beverage operations, including Barong Bar, K22 Bar Terrace and VIEW Steak Bar.

 

 

Bringing an exciting blend of charisma and persistence, Ale is set to elevate the beverage scene in Jakarta with extraordinary drinking experiences. With over 15 years of relevant experience as bartender, and having worked with a number of well-loved brands, Ale and his team always strives to provide the best Indonesian hospitality to their guests.

Born and raised in Kupang, Ale was introduced to the bar scene by his cousin who was living in Jakarta. There, he fell in love with the bar atmosphere and was drawn to the world of cocktails. Later, he started working as a bartender in Jogja, before moving to Jakarta. After honing his skills in several popular bars and pubs in Jakarta such as Nu China, Eastern & Oriental, and Lowey where he further develop his passion and attend several bartending competition in the city and beyond.

His cousin has a big role in hospitality industry that he is involved in. He fell in love at his cousin’s work place back then and then he started to work as a bartender in a small café in Yogyakarta. Later on, he came to Jakarta and worked at a night club, and from there he began to understand and passionate about bartender and mixologist industry. Furthermore, in 2015, he represent Indonesia and South-East Asia at “London No. 3 Gin Competition” in Singapore.

 

Originally from Kupang, East Nusa Tenggara, Indonesia, he believe local ingredients become his key elements and inspiration in every products he develop, starting from spices, herbs, even traditional foods. Under the creative vision of Ale, he would love to ease the drinker’s journey.

 

Merging traditional-style drinks with cutting edge techniques, the collaboration menu featuring traditional long-established spices becomes delectable cocktails at BAR ON G.

 

Ale’s first signature include Papua Dalam Cinta. Taking an inspiration from the idea of infused bourbon with nutmeg, then adding the much-loved flavor of the iconic Mesoyi-wood from Papua, this cocktail is the perfect reward to enjoy at the end of a high-achiever’s day. From Papua, Guests will continue the journey to appreciate coffee culture in Ambon, mixed between spices and coffee. Thus, Ale will serve Rarobang Coffee cocktail in a cold ceramic cup, with an incorporated between Nusantara Cold Brew and rum infused with roasted Pisang Ambon, creating an inviting aroma and subtle sweetness. At last, Guest will head to the West of Indonesia, to taste the freshness of Kalamansi. The handcrafted gin will comprehent this tropical cocktail called Taprobana.Found on the ground floor of Fairmont Jakarta, BAR ON G brings a sleek yet relaxed ambience to the night up Senayan district where sublime hospitality meets elevated beverage experience.  BAR ON G at Fairmont Jakarta open everyday, from 6pm-1am, Monday to Sunday.
